I’m all about easy dinners that are simple to make that are full of simple and healthy ingredients and satisfy my taste buds, mind and body. Well this is one of them. Or rather I should say here are two of them.
Aubergines. Yes I used to be a bit dubious about this vegetable being the highlight of a dish, however I have had quite a few meals now where they featured as a star ingredient and every single dish has been fantastic.
